This is actually a South Beach Diet recipe. I love their cookbooks.
It's really delicious. Just eliminate the tomoatoes if you don't like them, which is what I do for Michael.

Chicken Capri

1 T. Extra Virgin Olive Oil
1 T. Garlic Powder
4 Boneless Skinless Chicken Breasts (I only use Smart Chicken)

1 c. Low-fat Ricotta cheese
1 t. dried oregano
1 t. dried parsley
1 t. fresh chopped garlic
1 can petite diced tomatoes
4 slices low-fat low-moisture mozerella cheese
Sea salt & pepper as desired
Grated Parmesean if desired (Michael likes this, I don't)

Heat oven to 350. Combine oregano, parsley, and 1 t. fresh garlic with ricotta cheese, salt, pepper, parmesean if desired, and set aside. Trim any excess fat off chicken breasts. Heat EVOO over medium heat. Dust chicken breats with garlic powder. Brown in pan about 8-10 min. on each side. Move to baking dish. Put 1/4 c. of cheese mixture on top of chicken breast, top with 1/4 can of tomatoes. Cover with one mozeralla cheese slice. Bake in oven until juices run clear, about 10-15 more minutes.

I hate overcooked chicken; I like mine juicy and tender. I always barely undercook my chicken so when I take it out; it finishes cooking while resting. The satueed spinach from last week would be a great compliment to this dish. Enjoy!
